Su nombre es Primitiva Olvera, su jornada laboral, se inicia a las 6 de la mañana. Frente al fogón, todos los días, Ella, emprende su trabajo sin saber que lo que hace es ciencia, química, tradición, arte o profesión. Eso no importa, para una mujer simple, modesta, hogareña, discreta y tímida como Primitiva, lo importante es cumplir con sus clientes en las obras de construcción, a la hora de comer. Ellos, la esperan a las once de la mañana para comprar el lunch.

Y es que su comida es exquisita, dicen sus comensales. Tortillas, burritos, quesadillas, tortas, locheras para días de frio o de sol, y más de una docena de platillos componen el menú que esta mexicana de Queretáno ofrece en las calles o en el restaurante de La tienda La Guadalupana que atiende con su esposo.

La comida mexicana que doña Primitiva prepara tiene la tradición aprendida de su abuela, los ingredientes auténticos de su tierra, y una sazón particular que Ella le pone a sus preparaciones.

¿Y cuál es el secreto para que clientes árabes, americanos, latinos y mexicanos busquen tu comida? “No hay secreto. La sazón la tiene cada uno. Lo otro es que yo cocino por gusto, con cariño y otros cocinan por obligación. Mi mayor satisfacción es que les guste mi comida”.

Desde hace 8 años y medio Primitiva vive en Lexington, ensayando oficios y trabajos para sacar adelante a su familia. Tuvo su propio restaurante “El Jazmín”, el cual cerró por la crisis económica: “Era un trabajo demasiado pesado. Con clientes o sin clientes el trabajo de cocina es una maratón, es de mucho riesgo”.

Ahora, en la cocina de la Guadalupana, está más relajada y hasta le alcanza el tiempo para estudiar ingles, pues su interés es aprender a hablarlo y escribirlo. Su anhelo es que no le falten clientes y que se supere la crisis para mejorar la economía.

A Primitiva se le ve fresca y sin afanes en la cocina del restaurante. Tiene el encanto de una mamá que cocina para sus hijos. Con sabiduría y humildad dice que la cocina no es una profesión porque todas las mujeres pueden hacerlo. “Cocinar más que una profesión es una necesidad pues no siempre puedes ir a un restaurante, ni puedes tener quien cocine por ti ”

Al que le gusta le sabe, dice el refrán, y definitivamente a Primitiva Olvera no solo le gusta preparar comidas sino que lo sabe hacer. Este oficio de más de 8 años, le ha dado para vivir “mas desahogada”, como ella lo dice, le permite ayudar a su familia, y obtener la satisfacción de que cada día sea distinto y especial.

Her name is Primitiva Olvera, and her workday begins at 6 am. In front of the stove every day, she does her job without knowing if what she creates is science, chemistry, tradition, art, or occupation.

This isn’t important to a simple woman, modest, homely, quiet and shy like Primitiva. What is important is to meet with her customers at construction sites on their lunch hour. They wait for her at 11 am to buy lunch.

And it’s because her food is delicious, her lunch companions say. Tortillas, burritos, quesadillas, sandwiches, she serves lunches on both cold and sunny days.

More than a dozen dishes make up the Queretáno Mexican menu, offered in the streets or in the restaurant La Guadalupana that she runs with her husband.

The Mexican food that Mrs. Primitiva cooks is composed of the tradition learned from her grandmother, authentic ingredients from her homeland, and a particular seasoning that she puts in her dishes. And what is the secret that her Arab, American, Latino, and Mexican customers look for in her food? “There isn’t a secret. Each dish has seasoning. I cook for pleasure, with care, and others cook because of obligation. My main satisfaction comes from others enjoying my food.”

For eight and a half years, Primitiva has lived in Lexington, trying out trades and jobs to support family. She had her own restaurant “El Jazmin” which closed because of the economic crisis. “The work was too heavy. With customers or without customers, kitchen work is a marathon; there is a lot of risk.”

Now, in the kitchen of Guadalupana, it is more relaxed and she has found time to study English and is interested in learning to speak and write it. Her hope is that her customers don’t miss her and that economic crisis can be resolved and the economy improved.

Primitiva looks calm and natural in the restaurant kitchen. She has the charm of a mother cooking for her children. With wisdom and humility, she says that the kitchen is not a career because every woman can do it. “Cooking is more than a profession, it’s a necessity because you can’t always go to a restaurant nor have someone cook for you.”

That which one knows, one enjoys, goes the saying, and Primitiva Olvera definitely doesn’t like to cook food without knowing how to do it. In this trade for over eight years, it has allowed her to live “better off,” as she says. It allows her to help her family and get the satisfaction that every day is different and special.

A Ritmo de Mujer, Primitiva cooks delicious Mexican dishes. It strikes me that her corn tortillas have a secret, and it’s that this food provides protein, calcium and fiber, and by adding a legume such as beans, the quality of the protein improves. …If not, why do her soccer playing sons Raul and Daniel have so much energy on the field?
